
This is an easy Asian street food snack which is a party hit. I love eating food that’s served on a stick as it is easy to clean and makes for great finger food. It is also less messier than other party appetizers. Making it perfect to walk around having conversations with guests.
Ingredients:
To marinate:
1/2 cup vegetable or other neutral oil
6 tbsp lime juice
1/4 cup + 2 tbsp fish sauce
2 tbsp + 1 tsp soy sauce
3 stalks lemongrass, coarsely chopped, or replace with finely grated zest of 3 lemons.
2 shallots, peeled and coarsely chopped
4 garlic cloves, peeled and coarsely chopped
1/4 cup + 2 tbsp light brown sugar
2 tsp ground coriander
1 tsp ground turmeric
3 lbs boneless, skinless chicken breasts, sliced lengthwise into 1-inch-thick strips
For the peanut Dip:
1 cup chunky peanut butter (I use raw peanuts blended in a mixer grinder)
1/2 cup hot water
1/2 cup coconut milk
1 tbsp sriracha sauce, or to taste
Method:
- Start by marinating the chicken. In the blender, combine the oil, 4 tbsps of lime juice, a quarter cup of fish sauce, 2 tablespoons of soy sauce, the lemongrass, shallots, 3 of the garlic cloves, quarter cup of the sugar, the coriander, and turmeric. Blend on high speed for about 30 seconds.
- Add this paste to the chicken pieces and let it rest for 2-3 hours in a zip lock bag.
- Meanwhile prepare the peanut sauce. In a mixing bowl, combine the peanut butter, hot water, and coconut milk and whisk well. Add the remaining lime juice, 2 tablespoons fish sauce, 1 teaspoon soy sauce, 2 tablespoons sugar, and the sriracha and whisk well, adding a bit more water or coconut milk if necessary to thin the sauce to desired consistency. Taste and adjust seasoning with additional splashes of soy sauce, fish sauce, citrus juice or sugar as desired. Cover and refrigerate the sauce until 30 minutes before serving.
- To grill the chicken. Start by soaking the skewers in water for about 30 minutes before using them. Next thread one piece on each skewer, leaving enough holding room at the bottom of the skewer to turn them over. Grill each skewer for 8-10 minutes on each side on medium heat. Baste with remaining sauce if needed while grilling. Continue the process till your done with all the skewers.
- Serve hot with the peanut sauce.
