
Ingredients:
200 gms All-Purpose Flour
200 gms sugar
225 gms butter at room temperature
1 tsp baking powder
1 tsp vanilla essence
4 eggs whisked
2 tsp butter for greasing
1 cup dates and raisin chopped
Parchment paper
Method:
- Whisk butter and sugar in a bowl till the sugar melts. Slowly add in the whisked eggs and mix together.
- Now add in the sifted flour and baking powder. Gradually mix making sure there aren’t any lumps.
- At this point add in the chopped dates and raisin. Mix together and set aside to rest for 10-15 minutes.
- Meanwhile preheat oven at 190 C and grease a tin with butter and cover with parchment paper.
- Pour the batter in the tin and bake for 40-50 minutes or till golden.
- Remove from the oven and let it rest for 10-15 minutes in the tin. Then remove from the tin and keep on a cooling rack till ready to serve.
Tip: To re-soften the cake if it goes hard. Cut a slice of cake, sprinkle a few drops of water and microwave for 10-15 seconds.
