
Ingredients:
1 cup pasta
1/4 cup roughly chopped spinach
1/4 cup mushrooms roughly diced
5-6 cherry tomatoes
1/2 cup goat cheese
1/4 cup cream
1 tbsp finely chopped garlic
1/2 cup grated parmesan cheese
Crushed black peppercorns
Parsley to garnish
Salt
Water
Olive oil
Method:
- Heat a pot of water to cook the pasta with some salt. Once cooked, drain and keep aside to use later.
- Meanwhile, pre-heat oven to 220C. Then take a baking dish and add the cherry tomatoes, goat cheese, garlic, spinach, mushrooms and a little olive oil.
- Put the dish in the oven and bake for 15 minutes. Remove and mix them with a spoon.
- Then add the cooked pasta, cream, parmesan cheese and crushed black peppercorns and stir together. Bake for another 5-7 minutes.
- Garnish with parsley and serve hot.
