I call this the three pepper chicken for the fact that there are three different colored bell peppers that go in it. Though the “star” of this dish is the star anise that goes in during the sautéing process. It adds a sweet richness to the dish, something that is unexpected in hakka food.
Ingredients:
500 gms fried chicken
1 tbsp corn starch
1-2 star anise
1/2 cup diced onions
1 cup diced bell peppers (I’ve used red, green and yellow peppers)
1/2 tsp ajinomoto
1-2 green chilies chopped
1 tsp chopped garlic
1 tsp white pepper powder
Salt
Water
Oil
Method:
- Heat oil in a wok on medium to high flame. Sauté star anise, green chilies, garlic and diced onions.
- Once the onion is soft add the colored bell peppers and fry for another 3-4 minutes.
- In a small bowl mix corn starch with 1/2 cup of water and add to the wok and bring to a rolling boil. When the gravy thickens, add white pepper powder, salt and ajinomoto and stir well.
- Toss in the fried chicken pieces and mix further for 3-4 minutes.
- Serve hot.
