Burnt Garlic Noodles

Ingredients:
1 packet of noodles (I’ve used egg noodles but you can use any type)
1 small sliced onion
2-3 red chilles
1 tbsp chopped garlic
3-4 garlic sliced
1/4 cup green peas
1/2 carrot roughly sliced
1/4 bell pepper sliced
2-3 green onions chopped
1 tsp ajinomoto (MSG)
1 tsp black pepper powder
1 tbsp white vinegar
1 tbsp red chilli sauce
1 tbsp light soya sauce
1/2 cup shredded chicken (optional)
Oil

Method:

  • Heat enough water in a large pot with some salt and 1/2 cup of oil to cook the noodles. Drain water when done and run under cold water immediately. Add oil and toss them in a bowl to use later.
  • Meanwhile heat oil in a wok and sauté the sliced garlic till brown. Remove in a bowl and keep aside to use later.
  • In the same oil fry the red chilies, chopped garlic and sliced onions for 2-3 mins. Toss in the vegetables and stir fry for 3-4 minutes.
  • Now add in the cooked noodles, ajinomoto, red chili sauce, vinegar, soya sauce and black pepper powder. Add your protein at this point too. You could add boiled shredded chicken or shrimp to this. Mix this well together and sauté another 2-3 minutes.
  • Garnish with chopped green onions and fried garlic from earlier.
  • Serve hot!
