Sausage Pulav

Choris Pulav

Ingredients:
3 cups Basmati rice
400 gms goa sausages
1/2 tsp turmeric
10-12 black peppercorns
4-5 green cardamoms
2 Cinnamon sticks (1.5inch each)
1-2 Bay leaves
7 cloves
2 bouillon cubes
3 cups chopped onions
1 cup chopped tomato
3.5 cups hot water
Oil
Salt

Method:

  • Wash & soak rice for 30 mins and keep aside.
  • Meanwhile cook sausages in 1 cup of water till all the moisture is absorbed. Drain the fat & keep aside to either use later to fry the onions or discard if not preferred.
  • In a large wide pan, heat oil on medium flame & saute onions, bay leaf, peppercorns, cinnamon, cardamoms & cloves. Once the onions turn golden brown add turmeric & chopped tomatoes.
  • Add the bouillon cubes once the tomatoes are soft. Then add the washed basmati rice and mix well together. Now add in the hot water & mix in the sausage meat from earlier.
  • Cover and let the rice cook on medium heat for 10-15 mins. When done, mix well once more.
  • Serve hot.
