
Marzipan has been one of our families favorite X’mas sweets. There are not only delicious but beautiful to look at too. With so many colors it sure adds to the holiday magic. Traditionally marzipans are made with almonds but since cashews were found in abundance in Goa/ India, they were used as a substitute instead.
Ingredients:
1/4 kg cashew nuts powdered
1/4 kg sugar powdered
1 egg white lightly beaten
2 tbsp rose water
Method:
- Take a large non stick pan, add the sugar, rose water & egg white to it.
- Add the powdered cashew nuts & stir together making sure the egg is mixed well.
- Place the pan on low flame & keep stirring till it forms a lump. You will notice small white bubbles at the sides of the pan.
- Take down from stove & cool at room temperature.
- Make portions & add individual colors as desired. Put into molds and let it rest for a few minutes before you remove them out. Keep to dry if it is still soft or else store in an airtight container with parchment paper.
