
Ingredients:
1/2 chopped onion
1/2 tomato chopped
1/2 chopped bell peppers
1/2 boiled potatoes
1/4 boiled beetroots
A hand full of green peas
1 tbsp butter
1 tbsp pav bhaji masala
2-3 strips bacon
4-5 dinner rolls
Method:
- Heat oil in a pan & fry bacon till crispy. Keep aside to use later.
- Meanwhile heat the butter in a pan on med-low flame & saute the onions till translucent.
- Add the tomatoes & cook till soft & mushy.
- Now add in the veggies & a little water. Reduce flame & let it cook till half done.
- Add the pav bhaji masala & stir well. Cook further till veggies are cooked.
- To assemble: Take a dinner roll & stuff them with some of the veggie mix. Add a piece of crispy bacon & toast of a hot pan for a few minutes or till golden. P.s: You can skip the bacon or substitute it if you don’t eat pork.
- Serve hot as is.
Tip: Pav bhaji masala consists of red chillies, coriander seeds, cumin seeds, black pepper, cinnamon, clove, black cardamom, dry mango powder, fennel seeds and turmeric powder. So you could substitute them in proportion.
