
Ingredients:
1 cup Sabudana (Buy here- https://amzn.to/32FXTZL)
4 medium sized potatoes
½ cup peanuts (optional)
1 tsp cumin seeds
1-2 green chilies, finely chopped
1 tsp ginger, finely chopped
2 tsp lime juice
2 tbsp chopped coriander leaves
1.5 tsp sugar
Salt as per taste
Oil, for frying
Method:
- Soak the sabudana in water for 5 hours or overnight. Drain off all the water from the sabudana and transfer the sabudana to a mixing bowl.
- Meanwhile boil the potatoes. Peel and then mash them. Mix the mashed potatoes and sabudana together.
- In a shallow pan, roast the peanuts till they become crisp and crunchy. Cool and then coarsely powder them. (You can skip this step if you don’t have peanuts or if you have an allergy)
- Add the peanuts, salt, cumin seeds, sugar, ginger, green chilies, coriander leaves and lemon juice to the sabudana. Mix the entire mixture well.
- Now take a handful of the mixture in your palms and shape them into flat, round disc like shapes.
- In a pan heat oil for frying. Add the vadas, one at a time and fry them till they are golden brown on each side.
- Serve hot with raita or green chutney or even ketchup.
