
Ingredients:
500 gms pork cubed
1 medium onion chopped
Salt
Oil
Vindaloo Paste-
15 dried kashmiri red chilies
1 tsp ginger paste
2 tsp garlic paste
1″ cinnamon
1/2 tsp cloves
1 tsp black peppercorns
2-3 green cardamoms
1/2 tsp cumin seeds
1 cup vinegar or toddy
Method:
- Wash the pork pieces, pat dry & keep aside.
- Meanwhile grind all the ingredients for the vindaloo paste in a mixer/blender. Note: you don’t need to add water as we’ve added the vinegar.
- Marinate the pork with the masala & let it marinate for minimum 2 hrs. (I usually leave it overnight in the fridge to marinate).
- Next heat oil in a pot/pan on medium flame & fry the onions till golden brown. Add in the marinated pork & simmer for 20-30 mins till oil floats to the surface.
- Add a cup of water, salt & cook further till meat is tender.
- Serve hot with rice.
