Ingredients:
1 cup rice flour
1¼ cup water
Salt to taste
1 tsp oil
Method:
- Heat oil in a wok/pot along with salt & oil. When it comes to a rolling boil turn heat off & add the rice flour.
- Stir till it forms a soft dough. Keep aside to cool & later knead into a dough with wet hands.
- Next grease the chakli maker (I’ve used a noodle/pasta maker instead, it works the same way) & fill it with some of the rice dough.
- Tighten the lid & start making the idiyappams on a grease idli plate. (You can do the same by using a normal steamer & some foil as a plate).
- Cover & steam for 8-10 mins.
- Traditionally in Goa it is served with cold milk, jaggery & freshly grated coconut.
I’ve used a noodle maker to make these from amazon. Link here https://amzn.to/3c3bbmf
