Prawns with Baby Eggplant

Ingredients:

  • 200-300 gms prawns
  • 1 Onions (sliced)
  • 1 Tomato (chopped)
  • 1 tsp turmeric powder
  • 100-150 grams baby eggplant diced/cubed
  • 1/2 tsp cayenne pepper or red chilli powder
  • 1 tsp Salt
  • 2 tbsp Oil

Method:

  • Fry onions till onions turn translucent.
  • Now add the tomatoes & fry till soft.
  • Add turmeric & cayenne pepper saute till fragrant.
  • Now add the diced eggplant & a fry together.
  • Add in the peeled prawns & cook for 1-2 mins. Saute for a few mins & add a little water, salt if needed.
  • Cook till done, garnish with fresh coriander & mix well.
  • Serve hot with pao/pav.
