
Ingredients:
- 200-300 gms prawns
- 1 Onions (sliced)
- 1 Tomato (chopped)
- 1 tsp turmeric powder
- 100-150 grams baby eggplant diced/cubed
- 1/2 tsp cayenne pepper or red chilli powder
- 1 tsp Salt
- 2 tbsp Oil
Method:
- Fry onions till onions turn translucent.
- Now add the tomatoes & fry till soft.
- Add turmeric & cayenne pepper saute till fragrant.
- Now add the diced eggplant & a fry together.
- Add in the peeled prawns & cook for 1-2 mins. Saute for a few mins & add a little water, salt if needed.
- Cook till done, garnish with fresh coriander & mix well.
- Serve hot with pao/pav.
