
Ingredients:
280 gms ground pork
150 gms sweet peppers cut into rounds
170 gms string/green beans cut into half
2 scallions thinly sliced & separated
1 small cucumber cut lengthwise
1 lemongrass stalk chopped
150 gms Jasmine Rice
15 ml maple syrup
90 ml rice vinegar
40 ml sweet soy sauce
1/2 tbsp spice blend (mix equal parts of garlic powder,ginger powder, brown sugar, salt & black pepper)
Method:
- To prepare rice-
In a medium pot combine the rice with 1/2 cup water. Add salt & bring to a boil. Reduce the heat, cover & cook till done. Remove from heat & fluff with a fork. Add 1/3 of the spice blend. Set aside to rest. - Pickle the veggies-
In a medium pan, heat 1/2 of the rice vinegar, 1/2 maple syrup & 1/4 cup water. Season with salt & pepper. Bring to a boil & transfer to a bowl of sweet peppers & cucumber. Add 1/2 of the lemongrass & scallions. Set aside to rest/pickle. - To cook the pork-
In the same pan, heat a little oil on medium flame. Add ground pork, season with 1/2 of the remaining spice mix sparing some for later. Season with salt & pepper. Break the pork with a spoon & saute for 4-5 mins till browned & cooked through. Add the sweet soy sauce & remaining lemongrass, maple syrup & vinegar. Stir frequently till pork is coated. Transfer to a bowl with the sauce. - Saute the beans-
Heat a little oil in a pan on medium flame. Add the green/string beans to the pan & stir frequently till soft. Add the white bottoms of the scallions & 1 tbsp of water. Season with the remaining spice blend, salt & pepper. Cook further till crisp. - Plate your dish-
Place some of the jasmine rice in a bowl as your base. Top with the ground pork, pickled vegetables & string beans. Garnish with as many green scallions.
