
Ingredients:
1 pack or 220 gms of fat noodles boiled
220 gms Yu choy roughly chopped
200 gms carrots thinly sliced into rounds
30 ml Soy sauce
25 gms peanuts
3-4 garlic cloves minced
1′ ginger chopped minced
1 sliced red bell pepper thinly sliced
1 small onion sliced
1 bunch fresh cilantro chopped
1 lime juice & zest
1 tbsp spice blend (mix equal parts of garlic powder,ginger powder, brown sugar, salt & black pepper)
Method:
- In a large pan , heat some oil add 1/2 the garlic & add the peanuts. Cook for a minute & add as much lemon zest as desired. Stir in 1/2 the spice blend, salt & pepper. Mix well together & keep aside to cool.
- In the same pan, heat oil on medium flame. Add the ginger, onion & remaining garlic. Cook for 2-3 minutes till fragrant. Add the carrots & cook till soft. Now toss in the red bell peppers & yu choy, cook for 2-3 minutes.
- To the pan add the soy sauce, sweet soy & lime juice as per preference. Now add the noodles & mix all well together. Cook for 2-3 minutes till thoroughly coated. Season with the remaining spice blend, salt & pepper.
- Plate your dish by topping with cilantro & garnish with the spiced peanuts.
