
Malvani Mutton Curry also known as Muttonache Rassa (in Marathi) is a traditional recipe from the South Konkan region of Maharashtra & Goa.
Ingredients:
500 gms Mutton
To marinate mutton:
1/2 tbsp red chilli powder
1/4 tbsp turmeric
1/2 tbsp coriander powder
3/4 tbsp cumin powder
1/2 tbsp black pepper powder
Salt as per taste
Roast & grind to a paste:
1 cup chopped onions
1/2 cup grated coconut
3 tbsp coriander seeds
8-10 garlic cloves
2″ ginger piece
1″ cinnamon stick
4-5 cloves
4-5 black peppercorns
To saute:
1-2 bay leaves
2-3 green chillies
1/2 cup chopped onions
1/2 cup chopped tomatoes
1 cup chopped fresh coriander
1/4 lime
Method:
- Marinate mutton in the powdered spices mentioned above & let it rest for at least 1 hour.
- Meanwhile to make the paste, on medium to low flame heat a little oil in a pan & saute the chopped onions.
- Add the cinnamon, cloves & black peppercorns. Fry till fragrant.
- Now add the coriander seeds, garlic & ginger. Saute till the raw smell goes away.
- Then add the grated coconut & roast till nice and golden brown. Keep aside to cool & blend to a fine paste with some water.
- To make the curry heat some oil in a pot or pressure cooker & add the bay leaves along with the green chilies. Saute for a minute.
- Now add the chopped onions & fry till light golden. Make sure it doesn’t brown.
- Add chopped tomatoes & cook till soft and mushy.
- To this add the roasted coconut paste & mix all together. Fry the paste till you get a nice aroma.
- Now add the marinated mutton & stir all the spices well in. Add salt & a cup of water.
- Cook/pressure cook till mutton is done. Add chopped coriander leaves & lime juice on top.
- Serve with roti or rice.
