Coorgi Pork

Ingredients:

1 lb pork boneless cubed (I’ve used pork shoulder)

To marinate pork-
1 tsp red chilli powder
1/2 tsp turmeric powder
Salt

To be ground coarsely-
1 cup chopped onions
3-4 green chillies chopped
1′ ginger chopped
7-8 garlic cloves chopped
3/4 tbsp cumin seeds
1/2 cup fresh coriander
Salt

Spice mix 1 to be roasted & ground-
4 tsp cumin seeds
4 tsp whole pepper
1 tsp mustard seeds
1 tsp methi seeds (fenugreek)
3-4 cloves
1″ cinnamon
6-7 dried curry leaves

Spice mix 2 to be roasted & ground-
3 tablespoon coriander seeds

 

Method:

  • Marinate pork & keep aside for at least 3 hours. I’ve left it over night here.
  • Now put half cup water in the pressure cooker & cook till done approx 6 whistles. In an instant pot it takes around 13-15 mins to cook.
  • Add the coarsely ground wet onions coriander paste/masala.
  • Reduce till the dish is semi gravy.
  • Now add 3/4 tbsp of ground spice 1 & 1 tbsp of ground spice 2 mentioned above.
  • Add lime juice and a little bit of vinegar or kokum and cook until the gravy has dried out.
  • Serve hot with any rice preparation like neer dosa, akki roti, etc…
