
Ingredients:
2 cans of tuna
1/2 onion chopped
1/2 cup chopped fresh coriander
1 green chillies
1 tsp cumin seeds
1 tsp black peppercorns
10-12 cloves
1″ cinnamon stick
1/2 tsp garlic paste
1/2 tsp ginger paste
1 egg to bind
Oil
Salt if needed
Breadcrumbs, panko or semolina for coating.
Method:
- Take a bowl and squeeze out all the water from the tuna. The tuna should be nice and dry for them to take shape.
- Grind cumin, black peppercorns, green chillies, cloves, cinnamon, garlic and ginger paste together in a blender.
- Add the spice mix to the dry tuna and stir well.
- On medium flame, heat a little oil and fry the chopped onions.
- Once golden add the chopped coriander and fry well.
- Now add the tuna mix and toss together. This is a good time to dry out any moisture in the tuna and to taste for spice and salt.
- Take off heat and add an egg, mix well.
- Now make shapes and coat them in breadcrumbs or panko.
- Let them sit for a few minutes before frying them in oil on a shallow pan till golden.
- Serve with green chutney and/or garlic mayo.
