Idicha Kozhi Varuval (Shredded Chicken Stir Fry)

Ingredients:

To boil the chicken:

  • 500 gms/1 lb chicken thighs
  • 1/4 tsp turmeric
  • 1/4 tsp salt
  • Oil
  • Water

To saute:

  • 1 big onion sliced
  • 2-3 green chillies chopped
  • 8-10 curry leaves
  • 1 tbsp ginger-garlic paste
  • 1 tsp red chilli powder
  • 1 tsp Garam masala
  • 1 tsp black pepper powder
  • Salt to taste
  • Oil

Method:

  • In a pot/pressure cooker add some oil & seer the chicken. Then add water, salt & turmeric. Pressure cook till done. Cool, shred roughly into big pieces & keep aside. Note: Leave the bones in, it adds to the flavor of the dish.
  • In another pot heat oil & add the onion. Saute till translucent.
  • Add the green chillies & ginger-garlic paste. Fry till the raw ginger smell leaves.
  • Now add red chilli, garam masala & salt. Saute till spices are cooked.
  • Toss in the chicken pieces. Add water or stock & mix well together.
  • Add curry leaves & black pepper powder.
  • Mix together & remove from heat.
  • Serve hot!!!
